MARCO & AUBREY NICCOLI
From young ages both Marco and Aubrey knew they wanted to be chefs. They were greatly influenced by their childhoods. Marco’s mother (Judy) was a great home cook and his father (Bruno) a chef & restaurateur owned and operated Bruno’s Old World Italian Deli in Los Angeles for many years. Growing up in the industry gave him a hands-on education which has proven priceless for his creative mind. After graduating high school, he immediately entered culinary school, eager to build on his knowledge and fast track him into professional kitchens. Which brought him into Culinary Crafts, a world renowned catering company, where he honed his skill and became the youngest Executive chef in Utah at age 23. From there he went on to produce over 500 events annually and led his team to ICA Caterer of Year (2013). In this role and since then he has cooked for three Presidents of the United States, world leaders, world athletes, local leaders and celebrities. Marco was a guest chef at Chef Dance during the Sundance Film Festival and continues to cook for private events for celebrities in Park City during the festival annually. During this time Marco was recruited away to Traeger Grills as the Global Culinary Director. At Traeger, Marco earned his BBQ stripes traveling the world studying authentic BBQ with some of the best pit masters in the industry, including “The Professor” Tuffy Stone. Since then Marco and Aubrey have joined forces and built their private cheffing company am.

Aubrey grew up in the Pacific Northwest (Seattle), she would go crabbing during the summers and spend weekends at Pike place market. These experiences instilled an appreciation and love of fresh seafood and produce. She learned the art of catching, cleaning and cooking – sea-to-table was very real. Driven by passion, she graduated from the Culinary Arts Institute at UVU. Loving every second and absorbing everything she could in school. That’s where she cultivated her skills and developed an excitement for Italian cuisine. This excitement took her to Italy where she studied and learned the art of homemade pasta, pizza, and sauces. While pairing her love for pasta, seafood and citrus she couldn’t stop. She quickly started her private cheffing business at age twenty-four fresh out of culinary school. She started building a network of clients through her community and began teaching private cooking lessons and catering small private events. Quickly that grew and she has used her skills and passion to feed the masses over the last 10 years and still counting. Aubreys had the opportunity to cook for many professional athletes, musicians, C-level executives, local politicians and surgeons. She has competed in local cooking competitions and won. But most of all, she loves to create culinary experiences for people. The feeling at the end of the event, when you have brought pure joy through your food is euphoric. A magical beautiful moment that lights her fire every single time.
